Ingredients: 500g/1lb 2oz smoked haddock; 1 bay leaf; 2 large white onions (1 whole, 1 peeled and chopped); Fish stock; 2 tsp butter; 1 tbsp olive oil; 1 green chilli, deseeded and finely chopped; 2 cardamom pods, crushed; 1 tsp turmeric; 1 tsp mustard seeds; 1 tsp curry powder; 350g/12oz cooked basmati rice; 75ml/3fl oz double cream; Salt and freshly ground black pepper, to taste; A small handful of fresh chives, chopped; A small handful of fresh coriander, chopped; 4 eggs, for poaching; Dash of vinegar; Mango chutney, to serve
