Ingredients: 2 purple or orange sweet potatoes; FOR THE SALSA MACHA; 2 ancho chillies, deseeded; 2 guajillo chillies, deseeded; 4-6 Chile de arbol chillies, deseeded; 350ml olive or rapeseed oil; 20g pumpkin seeds; 3-4 garlic cloves, chopped; 35g roasted peanuts; ½ tsp cumin seeds; 1 tbsp sesame seeds; 3 tbsp apple cider vinegar; 1 tsp Mexican oregano; A good pinch of salt, to taste; FOR THE CORN TORTILLAS (OPTIONAL); 325g masa harina; A pinch of coarse sea salt; 415ml room temperature water; FOR THE FLOUR TORTILLAS (OPTIONAL); 275g plain flour; ½ tsp coarse sea salt; 1 tsp baking powder; 1 tbsp rapeseed oil; 175ml room temperature water; FOR THE GUACAMOLE; 2 ripe avocados, pitted and roughly chopped; ½ a white or red onion, chopped; Juice of 1-2 limes; ½ a jalapeño, minced; A handful of coriander leaves and a few stems, chopped
