Ingredients: 800g/1¾lb Jersey Royal new potatoes, scrubbed and halved; 4 tbsp olive oil; 2 yellow onions, peeled and diced; Sea salt; 1 green chilli, deseeded and finely chopped; ½ small bunch fresh mint, leaves picked and roughly chopped; 3 sprigs of fresh tarragon, leaves picked and finely chopped; Juice of 1 lime; For the green salsa; 225g/8oz gooseberries (try farm shops for frozen berries); 1 small white onion, peeled; 2 green bird’s eye chillies, stalk removed; 1 small clove garlic, peeled; A large handful of fresh coriander, roughly chopped, plus more to serve; Juice of 1-2 limes; ½ tsp caster sugar; To serve; 80g/3½oz Lincolnshire Poacher or a mature cheddar, grated; 20g/¾oz butter; A couple of splashes of olive oil; 4 small tortillas, corn or flour
